
Ok, today I made the best avocado dip ever....so good, the kids almost ate the whole bowl! :)
I left out the feta cheese since I did not have any in the house. 3 grocery store trips this week is my limit. haha
I made crackers too....so yummy...there are about 5 left! The kids were so sweet today to thank me for "all the healthy and delicious" food I have been making. Makes all the effort sooo worth it!
For those who may think...."who has time to cook healthy and make food from scratch"... that was my thinking just a few months ago. Really, if you make time and even take a 1/2 hour a day or every other day....it can make a difference.
I had to make time. When school is back in, I will probably take a couple hours one day a week to make some things and then freeze it. I prepare things at night like pancake batter and it is ready to go in the morning when we are the busiest.
Honestly, I have two kids to care for (the good part is they love helping me cook), 3dogs, 5 fish, a bird, a hamster, a husband, a photography business that is crazy busy thanks to my amazing clients, a vacation rental in San Diego to manage that we own that is constantly booking, I volunteer to be a girl scout leader, volunteer for New Directions/AZCA, help with my MOMS club where I can, attend playdates, plan on teaching an art class for a couple weeks this summer, have regular rentals to rent out and fix up, teach photo workshops, and just started with a great company to sell safe products so I can share the knowledge I have been so lucky to obtain. I know there is more, like this week getting to care for my parent's pets while they are gone, but you get the idea...I am BUSY and can still manage to make some food for my family. I know it will not be everyday and I am not perfect at this, but I feel good at least trying to go organic. One day at a time is how I can manage this and the laundry has been a bit neglected for a couple days. ;)
